DESSERT: Banana, Date and Walnut Blondie

If you like chocolate brownies try these blondies for a change - best served warm with ice cream or cream. If you know that some of your guests have a really sweet tooth you could serve it with a little maple syrup to pour over the top!

You can make it a day or two before it’s needed and reheat in the oven or microwave.

Ingredients

Serves 8

  • 225g butter or margarine
  • 225g porridge oats - rough oats give better texture
  • 225g self raising flour
  • 110g light soft brown sugar
  • 110g dark soft brown/muscovado sugar
  • 1/2teaspoon bicarbonate of soda
  • 2 large eggs, lightly beaten
  • 1/2teaspoon vanilla essence (optional)
  • 1 medium / large banana
  • 25g chopped walnuts
  • 110g chopped dates

Method

For the quantities we give you’ll need a 9 inch round cake tin or an 8 inch square cake tin, ideally a loose bottomed one. Grease and line the bottom of the tin with greaseproof paper or baking parchment.

  1. Mix the oats, flour, sugars and bicarb in a large bowl.
  2. Melt the butter over a low heat.
  3. Remove the melted butter from the heat and stir into the dry ingredients.
  4. Lightly whisk the eggs and, if you’re using it, add the vanilla essence.
  5. Add the eggs to the oats, flour, sugars, butter and mix well.
  6. Spread half the mixture over the base of the cake tin.
  7. Cover with bananas, dates and walnuts and cover with the rest of the oat / flour mixture, smoothing over the surface as best you can with a fork or the back of a tablespoon.
  8. Bake for about 30 minutes until golden brown.
  9. Serve warm with cream or ice cream.
